
Makes 12 mid size scones
Ingredients:

2 cups flour
-
2 tsp baking powder
-
Pinch of salt (optional; some say it enhances the flavour)

30gr butter (less than ¼ cup)

½ cup milk
-
½ cup water
Directions:

Preheat oven to 425 degrees (convection, if possible)

Sift flour and salt together in a large bowl. Add chunks of butter and rub flour and pieces of butter together to create a coarse, meal like texture.

Make a well in the centre of the flour mixture and add milk and water.

Add one cup of your favourite berries (fresh or frozen blueberries, cranberries, raspberries, or a mix)

Mix with a spatula (or your hands) until a dough is formed. (do NOT over-mix; scones will come out better if undermixed) Knead GENTLY either in the bowl or onto a board/counter

You may either roll the dough gently with a rolling pin at this point and use a glass to make round buns. I personally like to tear a small fistful at one time and place on top of a baking sheet (lined with parchment paper) I find the scones come out more “natural” looking this way. Place about an inch apart

Glaze with milk and put into pre-heated oven. Bake for 10-12 minutes until golden brown. Take out and place on wire rack and cool
